Ingredients:

  • 4 cups rice cereal
  • 2 Tbsp. light butter spread
  • 2 cups mini marshmallows, packed
  • 2 tsp. pumpkin pie spice
  • 1 Tbsp. canned pumpkin puree

Directions:

  1. Line an 8-inch square pan with parchment paper and set aside.
  2. Heat a large pan over low heat. Add light butter spread and melt. Once melted, add mini marshmallows. Stir with a rubber spatula until melted.
  3. After marshmallows have melted add pumpkin pie spice and pumpkin puree.
  4. Add rice cereal and fold together until a thick mixture is formed.
  5. Press the cereal mixture into the prepared pan. Allow the bars to cool completely before slicing and serving. Bars can be stored in the refrigerator and served chilled or served at room temperature.
