Ingredients:

  • Raspberry Filling
  • 2 cups raspberries
  • 1 Tbsp. lemon juice
  • 1 tsp. cornstarch
  • Oatmeal Crust and Crumble
  • 1 ¼ cup rolled oats
  • ¾ cup blanched almond flour
  • ½ tsp. baking powder
  • ¼ cup coconut sugar
  • ½ tsp. cinnamon
  • ½ cup almond butter
  • ¼ cup maple syrup

Directions:

  1. Preheat oven to 375°F. Line an 8x8" baking pan with parchment paper.
  2. In a bowl, toss together raspberries, lemon juice and cornstarch. Use a fork to mash the raspberries a bit. Set aside.
  3. Place oats in a blender or food processor. Pulse to break up the oats a bit.
  4. Combine the oats with almond flour, baking powder, coconut sugar and cinnamon. Fold in almond butter and maple syrup.
  5. Press 2/3 of the oat mixture into the baking pan. Top with the raspberry mixture.
  6. Press remaining oat mixture on top.
  7. Bake in the oven for 35-40 minutes, until the top starts to brown. Let it cool completely before serving.
