Ingredients:
- 1 cup nonfat plain Greek yogurt
- 1 Tbsp. freshly-squeezed lime juice
- 1 Tbsp. curry powder
- ½ tsp. sea salt
- 1/8 tsp. ground black pepper
- 8 ounces (~2 cups) cooked, shredded rotisserie chicken
- 2 scallions, thinly sliced
- ¼ cup slivered almonds
- ½ cup grapes, halved
- ½ cup shredded carrots
- ½ cup roughly-chopped fresh cilantro
Directions:
- In a medium bowl, whisk together Greek yogurt, lime juice, curry powder, salt and pepper.
- Add the chicken, scallions, slivered almonds, grapes, shredded carrots and cilantro to dressing. Stir to combine.
