- 1 cup mushrooms, chopped
- 1 head cauliflower, chopped
- 1 bunch celery, chopped
- 2 bell peppers, chopped
- 1 box low-sodium vegetable broth
- 1 box spicy Pico De Gallo
- 1 container spicy fresh salsa
- ½ cup snap peas
- 1 (8 oz.) can bamboo shoots
- Add all ingredients to a slow cooker.
- Cook on low for 10 hours or overnight.
