- 6 large strawberries
- ¼ cup part-skim ricotta cheese
- 1 tsp. stevia
- ¼ tsp. vanilla extract
- 2 tsp. mini chocolate chips
- Slice top and bottom off of strawberry. Using a paring knife or melon baller, hollow out the strawberries.
- In a small bowl, combine ricotta cheese, stevia and vanilla extract.
- Spoon ricotta mixture into hollowed out strawberries.
