These Stuffed Strawberries are not only tasty, but they’re also super simple to whip up. Slice the tops off of six strawberries and hollow out each one.

Ingredients:

  • 6 large strawberries
  • ¼ cup part-skim ricotta cheese
  • 1 tsp. stevia
  • ¼ tsp. vanilla extract
  • 2 tsp. mini chocolate chips

Directions:

  1. Slice top and bottom off of strawberry. Using a paring knife or melon baller, hollow out the strawberries.
  2. In a small bowl, combine ricotta cheese, stevia and vanilla extract.
  3. Spoon ricotta mixture into hollowed out strawberries.
  4. Sprinkle with chocolate chips and serve.
