Looking for an easy and festive treat to make for the family this Saint Patrick’s Day? This is the perfect recipe. And chances are, you already have all of these ingredients laying around the house. Light wheat English muffins are topped with delicious ingredients, including Neufchatel cheese, chives, minced dill, salt and pepper. Sliced cucumber, green bell pepper and parsley leaves are used to put the final touches on these Irish Tea Sandwiches and create the shamrocks. Talk about a healthy snack that can “shamrock” your diet… in the best way possible!

Ingredients:

  • 4 ounces Neufchatel cheese, softened
  • 1 Tbsp. minced chives
  • ½ tsp. fresh dill, minced
  • Pinch of sea salt
  • Pinch of ground black pepper
  • 2 light wheat English muffins, split
  • 12 slices of cucumber
  • 4 strips of green bell pepper
  • 4 parsley leaves

Directions:

  1. Mix the cream cheese with the chives, dill, salt and pepper.
  2. Spread each half of the English muffin with the cream cheese mixture.
  3. Place 3 slices of cucumber on each English muffin forming a shamrock.
  4. Use the green pepper to create a stem and top with a parsley leaf.
