On Nutrisystem, Count As: 1 SmartCarb and 1 Extra
- 4 ounces Neufchatel cheese, softened
- 1 Tbsp. minced chives
- ½ tsp. fresh dill, minced
- Pinch of sea salt
- Pinch of ground black pepper
- 2 light wheat English muffins, split
- 12 slices of cucumber
- 4 strips of green bell pepper
- 4 parsley leaves
- Mix the cream cheese with the chives, dill, salt and pepper.
- Spread each half of the English muffin with the cream cheese mixture.
- Place 3 slices of cucumber on each English muffin forming a shamrock.
- Use the green pepper to create a stem and top with a parsley leaf.
