  • 3 oz. raw boneless chicken breast
  • ½ cup broccoli
  • ¼ cup snow peas
  • ¼ cup red bell pepper, cut into chunks
  • 1 tsp. olive oil
  • 2 Tbsp. teriyaki sauce, low sodium


  1. Preheat oven to 425°F.
  2. Cut 18 x 12 inch square of aluminum foil. Spray with nonstick spray.
  3. Place chicken breast in the middle of the foil and divide the vegetables evenly around the chicken.
  4. Drizzle chicken and vegetables with oil.
  5. Brush 1 Tbsp. teriyaki sauce on chicken and vegetables.
  6. Fold the foil over the chicken and seal the packet.
  7. Cook for 35 minutes or until chicken is cooked.
  8. Brush chicken and vegetables with remaining 1 Tbsp. teriyaki sauce.
  9. Serve immediately with rice, quinoa or your favorite SmartCarb.
