On Nutrisystem, Count As: 2 PowerFuels, 1 SmartCarb, 3 Extras and 1 Vegetable

Ingredients:

  • 2 Tbsp. olive oil, divided
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups sweet potato, peeled and cubed
  • 1 10-oz. can fire roasted diced tomatoes
  • 2 Tbsp. tomato paste
  • 1 lb. vegetarian ground meat
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 cup corn
  • 1 ½ cup vegetable broth, low sodium
  • 4 Tbsp. cilantro, chopped
  • ½ avocado, diced

Directions:

  1. Preheat oven to 425°F. Place sweet potatoes on a baking sheet and drizzle with 2 teaspoons of olive oil. Bake for 25 minutes.
  2. Meanwhile, in a large pot, heat remaining olive oil. Add onions and peppers and cook for 5 minutes. Add garlic.
  3. Add vegetarian ground meat and cook for about 7 minutes or until cooked through.
  4. Add tomato paste, cumin and chili powder. Stir to combine.
  5. Add corn, cooked sweet potatoes, diced tomatoes and broth.
  6. Heat on high to a boil and then turn down heat to low and simmer for 20 minutes.
  7. Garnish with chopped cilantro and chopped avocado.
