On Nutrisystem, Count As: 2 PowerFuels, 1 SmartCarb, 3 Extras and 1 Vegetable
- 2 Tbsp. olive oil, divided
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups sweet potato, peeled and cubed
- 1 10-oz. can fire roasted diced tomatoes
- 2 Tbsp. tomato paste
- 1 lb. vegetarian ground meat
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 cup corn
- 1 ½ cup vegetable broth, low sodium
- 4 Tbsp. cilantro, chopped
- ½ avocado, diced
- Preheat oven to 425°F. Place sweet potatoes on a baking sheet and drizzle with 2 teaspoons of olive oil. Bake for 25 minutes.
- Meanwhile, in a large pot, heat remaining olive oil. Add onions and peppers and cook for 5 minutes. Add garlic.
- Add vegetarian ground meat and cook for about 7 minutes or until cooked through.
- Add tomato paste, cumin and chili powder. Stir to combine.
- Add corn, cooked sweet potatoes, diced tomatoes and broth.
- Heat on high to a boil and then turn down heat to low and simmer for 20 minutes.
- Garnish with chopped cilantro and chopped avocado.
