Spicy Peanut Slaw

  • 1/4 cup rice vinegar
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons peanut butter
  • ¼ cup sliced green onion
  • 2 cups package cabbage and carrot coleslaw mix
  • 1 tablespoon fresh parsley
  • ¼ cup crushed peanuts


  1. Combine the rice vinegar, low sodium soy sauce, and peanut butter then pour into a large bowl
  2. Add the coleslaw mix, parsley, crushed peanuts and green onions, and toss until well-mixed
