Ingredients:
- 1/4 cup rice vinegar
- 2 tablespoons low sodium soy sauce
- 2 tablespoons peanut butter
- ¼ cup sliced green onion
- 2 cups package cabbage and carrot coleslaw mix
- 1 tablespoon fresh parsley
- ¼ cup crushed peanuts
Directions:
- Combine the rice vinegar, low sodium soy sauce, and peanut butter then pour into a large bowl
- Add the coleslaw mix, parsley, crushed peanuts and green onions, and toss until well-mixed
