To make these low carb zucchini enchiladas, get started by preheating your oven to 400 degrees. Slice your zucchinis lengthwise to create thin slices. Once you have done this, place the sliced zucchinis onto a baking sheet.
Spray the tops of the zucchini with some nonstick cooking spray. Then, pop them in the oven and let them cook for about 15 minutes. The zucchini should be tender and slightly browned.
While your zucchini slices are baking, you can prepare the delicious beef filling in a large pan over medium-heat. Simply cook some ground beef until it is fully cooked. Then stir in corn, black beans and a half-cup of enchilada sauce.
Once your zucchini slices are ready and beef filling is prepared, it’s time to finally assemble your Zucchini Enchilada Roll Ups!

Directions:
- Preheat oven to 400°F.
