Finally, stir in the beef along with some bay leaves and seal your Instant Pot with its lid.

Set your Instant Pot to manual mode and allow it to cook for 35 minutes. Once the timer goes off, let the Instant Pot naturally release for 10 minutes before releasing any remaining pressure using the quick release valve. When you’re ready to serve your Instant Pot Beef Stew, simply stir some green peas into the mixture.

Ingredients:

  • 1 lb. lean beef stew meat, cut into 1-inch pieces
  • 1 Tbsp. olive oil
  • 1 tsp. black pepper
  • 1 tsp. Italian seasoning
  • 3 cups beef broth, low sodium
  • 2 tsp. Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and cut into 1-inch pieces
  • 2 parsnips, peeled and sliced
  • 3 Tbsp. tomato paste
  • 3 bay leaves
  • ¾ cup green peas
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water

Directions:

  1. Set Instant Pot to sauté. Once hot, add olive oil. Add meat and season with pepper and Italian seasoning.
  2. Cook meat until browned. Remove and set aside.
  3. Add broth and scrape up any brown bits.
  4. Add Worcestershire sauce, onion, garlic, carrots, celery, potato, parsnip and tomato paste.
  5. Add in beef and bay leaves.
  6. Top Instant Pot with lid and set to seal. Cook manual for 35 minutes. Let it naturally release for 10 minutes and then quick release.
  7. Add in green peas and stir.
  8. Mix cornstarch and water into a slurry.
  9. Set Instant Pot to sauté and pour in the cornstarch slurry. Stir mixture until thickened.
