Ingredients:

  • Apple Filling
  • 4 cups apple, peeled and sliced ¼” thick
  • 1 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 2 Tbsp. honey
  • Cobbler Topping
  • 1 cup white whole wheat flour
  • 2 Tbsp. white sugar
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. cinnamon
  • 3 Tbsp. cold light butter
  • ½ cup unsweetened almond milk

Directions:

  1. Preheat oven to 375°F.
  2. Toss the apples in lemon juice, cornstarch, cinnamon, nutmeg and honey. Transfer to a baking dish.
  3. In a separate bowl, mix together the flour, sugar, baking powder, baking soda and cinnamon.
  4. Crumble the butter into the flour mixture using fingers (or pastry cutter) until the mixture resembles a coarse crumb. Add the milk and combine well to form a batter.
  5. Dollop the batter over the apples.
  6. Bake for 40-45 minutes, until fruit is soft and bubbling, and top is golden. Keep an eye during the last 10 minutes. If the top is getting too brown, cover it with aluminum foil.
