On Nutrisystem, Count As: 1 ½ SmartCarbs and 3 Extras

  • Dough
  • 2 cups whole wheat pastry flour
  • 1 ½ cup all-purpose flour
  • 2 Tbsp. coconut sugar
  • 1 egg
  • ¼ cup light butter
  • 1 ¼ cup nonfat milk
  • 1 packet dry active yeast
  • Apple Pie Filling
  • 4 medium apples, peeled and chopped
  • 1 Tbsp. cinnamon
  • 2 Tbsp. water
  • ¼ cup unsweetened applesauce
  • Glaze
  • 2 oz. cream cheese, low fat
  • 2 tsp. light butter
  • ¼ cup powdered sugar
  • 1 Tbsp. nonfat milk (may need more to thin out)

  1. Mix together flours and yeast.
  2. Melt butter in a saucepan. Once melted, remove from heat and add in milk and sugar. You want the milk to be about 105-110°F or slightly above room temperature. Turn off heat.
  3. Add in egg to liquid mixture and mix well.
  4. Pour wet ingredients into dry ingredients. Use a stand mixer with a dough hook until no longer sticky or knead by hand for about 5 minutes.
  5. Place dough in bowl and cover with plastic wrap and let rise for about 2 hours.
  6. In the meantime, make apple pie filling by placing apples, cinnamon and water in a pot. Simmer over medium heat until apples are soft and retain their shape, about 15 minutes.
  7. Turn risen dough on to a floured surface. Roll dough evenly to a rectangle shape, about ¼-inch thick.
  8. Spread applesauce over dough and sprinkle cooked apples on top.
  9. Roll dough from the long side until you have a long roll. Cut the roll into about 12 slices and place on a greased baking dish.
  10. Cover baking dish and let rise for about 20 minutes. During this time, preheat the oven to 350°F.
  11. After letting the dough rise, bake the cinnamon rolls for about 25-30 minutes or until they are golden brown.
  12. Remove from oven and let cool slightly.
  13. While the rolls are cooling, make the glaze by combining butter, powdered sugar and cream cheese in a food processor or blender. Add milk until desired thickness.
  14. Spread glaze over the cinnamon rolls.
