Ingredients:

  • 4 hardboiled eggs
  • ½ avocado
  • ½ Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • Black pepper, to taste
  • Paprika, to taste

Directions:

  1. Cut eggs in half lengthwise. Scoop out the yolks into a bowl.
  2. Place avocado in the bowl with the egg yolks. Mash the yolks and avocado together.
