  • 1 head cauliflower
  • 1 egg
  • 1 ½ cup Monterey jack cheese, shredded, reduced fat
  • 3 Tbsp. buffalo sauce
  • 2 tsp. chives, chopped


  1. Preheat oven to 350°F. Line a baking sheet with foil and spray with nonstick spray. Set aside.
  2. Cut cauliflower into florets. Place in a food processor and pulse until it becomes a rice texture.
  3. Transfer the riced cauliflower to a microwave-safe bowl. Cover and cook for 10 minutes.
  4. Transfer the cauliflower onto a cheesecloth or kitchen towel and squeeze out as much liquid as possible.
  5. Place the cauliflower into a bowl and add the egg, 1 cup of cheese and buffalo sauce. Mix to combine.
  6. Spread the mixture onto a baking sheet and form it into a rectangle that's about ¼-inch thick.
  7. Bake for 15 minutes.
  8. Remove the cauliflower bread from the oven and cut it into 12 sticks. Separate the sticks slightly and top with the remaining ½ cup of cheese.
  9. Return the breadsticks to the oven for another 5 minutes.
