Chipotle Turkey Meatballs

Every party needs a plate of meatballs, and it’s up to you to bring these Chipotle Turkey Meatballs! After just one bite, your friends and family will be asking for them time and time again. And the best part about these delicious meatballs? They fit perfectly into your Nutrisystem meal plan, so you can enjoy them while you lose weight and get healthy!

Whip up this recipe with a few simple steps and start by preheating your oven to 400 degrees. Line a baking sheet with a sheet of parchment paper and grab a large bowl to combine the lean ground turkey, breadcrumbs, chopped spinach, a large egg, Italian seasoning, garlic powder and onion powder—mix the ingredients well until fully combined. Roll the turkey mixture into 18 meatballs and place meatballs onto the baking sheet. Arrange the meatballs so that no two are touching to allow for even baking. Bake them for about 25 minutes or until they’re golden on the outside. After 25 minutes have passed, set the baking sheet aside and let them cool for about five minutes.

As the meatballs are baking, grab a second bowl and combine Greek yogurt, chili powder, chopped cilantro and honey. Mix these ingredients well and refrigerate the dipping sauce until the turkey meatballs are ready. Once everything is prepared you’re ready to dip!

Ingredients:

  • Meatball
  • 1 lb. lean ground turkey
  • ½ cup breadcrumbs
  • ½ cup chopped spinach
  • 1 large egg
  • ½ tsp. Italian seasoning
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • Chipotle Dipping Sauce
  • ½ cup nonfat plain greek yogurt
  • 2 tsp. chili powder
  • 1 Tbsp. chopped cilantro
  • 2 tsp. honey

Directions:

  1. Preheat oven to 400°F. Line baking sheet with parchment paper.
  2. In a large bowl, combine meatball ingredients and mix until well combined.
  3. Roll turkey mixture into about 1 ½ - inch meatballs. Place on baking sheet.
  4. Bake for 25 minutes or until outside is golden. Let cool for 5 minutes.
