Ingredients:

  • ½ cup brussel sprouts, trimmed and halved
  • ½ cup baby potatoes, quartered
  • 1 medium carrot, cut into ½ inch slices
  • 2 tsp. olive oil
  • 1 garlic clove, minced
  • 2 tsp. dried oregano
  • 1/8 tsp. onion powder
  • ¼ tsp. black pepper
  • ¼ cup grated Parmesan cheese, low sodium

Directions:

  1. Preheat oven to 400 F.
  2. In a medium bowl, stir together olive oil, oregano, onion powder, garlic and black pepper.
  3. Add in vegetables and toss to coat.
  4. With a 18 x 12 inch piece of heavy aluminum foil, place the vegetable mixture into the center of the foil. Seal foil packet.
  5. Bake for 35 minutes or until potatoes are cooked.
  6. Sprinkle with Parmesan cheese and serve immediately.
