These delicious Gluten Free Sugar Cookies taste just like the calorie-laden kinds you find in the dessert or bakery aisle of your supermarket, but they go much, much lighter on the sugar, fat and calories. And, requiring just seven quick steps to make, they’re as simple to make as they are sweet to eat!

Servings: Makes 24 cookies; 1 cookie counts as 1 serving
Calories per Serving: 59
On Nutrisystem, Count As: 2 Extras
- 1 cup gluten free all-purpose flour
- ½ cup almond flour
- ½ cup sweetener (i.e. Truvia Baking Blend, Erythritol, Swerve)
- 1 egg
- 1/3 cup light butter
- ½ tsp baking powder
- 1 tsp. vanilla extract
- 1 orange, juiced
- Preheat oven to 350 F.
- Cover a baking sheet with parchment paper.
- Mix all ingredients with an electric mixture until it forms a cookie crumble.
- Gather the cookie crumble with your hands to form a cookie ball.
- Freeze for 10 minutes.
- Remove from freezer, roll about one tablespoon of dough in your hands and form a ball. Use the back of a spoon to slightly flatten the cookie.
- Bake for 12 minutes and serve.
