- 6 oz boneless chicken breast
- ½ cup red potatoes, sliced ¼-inch thick
- ½ cup red and yellow bell peppers, sliced thinly
- ¼ cup red onion, sliced thinly
- 1 tsp. olive oil

- ¼ tsp. black pepper
- Preheat oven to 350 F
- Make horizontal slits across chicken breast.
