No Panini Maker? No problem. We’ve provided you with three different ways to whip up this tasty Roast Beef Panini, including the use of a stove top or a grill. No matter which way you choose to prepare this recipe, it will only be a matter of minutes before your panini is pressed to perfection. All you need is a whole wheat sandwich thin, roast beef, cheese, tomatoes, spinach and a little bit of horseradish and low-fat mayonnaise to create this Roast Beef Panini masterpiece.

The prep of this recipe is the same no matter what tool you use to cook it. You’ll simply assemble the sandwich just how you like it and let the heat do the rest of the work! Just don’t forget to add the horseradish mixture to ensure you taste the good old-fashioned deli sandwich flavor.

We love this recipe because you can really make it your own. If you want your panini to be a little fuller, add in an extra slice of tomato or maybe use an extra-large handful of spinach. Ingredients:

  • 1 whole wheat sandwich thin
  • 2 oz roast beef
  • 1 slice low fat cheddar cheese
  • 1 slice low fat cheddar cheese ¼ teaspoon horseradish
  • 1 teaspoon low fat mayonnaise
  • 2 thin tomato slices
  • Handful of spinach

Directions:

  1. Combine horseradish and mayonnaise together.
  2. On one slice of bread, spread horseradish mixture. Top with cheese, roast beef, tomatoes and spinach, top with other slice of bread.
  3. Place assembled sandwich in a preheated panini press. Press lid down and allow to cook for a few minutes until crispy.
  4. Combine horseradish and mayonnaise together.

  6. Grease a heated skillet with nonstick spray and place assembled sandwich in the center. Lay another pan, plate or lid on top of the sandwich. Weigh down with heavy objects or just push down on the surface of the sandwich. Cook for a couple minutes until crispy and flip and cook for a couple minutes.
  7. Combine horseradish and mayonnaise together.
  8. On once slice of bread, spread horseradish mixture. Top with cheese, roast beef, tomatoes and spinach, top with other slice of bread.
  9. Spray both sides of sandwich with nonstick spray. Place sandwich on preheated grill and cook on each side for a few minutes, until crispy.
