Hearty paninis are a quick-and-easy meal that you can load up with healthy ingredients to create a diet-friendly go-to, and this Avocado Pesto Panini is no exception. Packed with protein and fiber, whip up this delicious panini in a panini maker, on the stovetop or even on the grill for a filling lunch or dinner the whole family will love.

With six simple ingredients and in two simple steps, you’ll biting in a cheesy, pesto-filled sandwich that’s packed with flavor and nutritional value.

To make this Avocado Pesto Panini, simply spread one slice of bread with mashed avocado and the other with pesto. Top one slice of the bread with provolone cheese, a handful of spinach and sundried tomatoes.

Place the assembled sandwich on a panini maker, the stovetop or grill. If using the panini maker, simply press the lid down and allow to cook until crispy.

If using the stovetop, grease a heated skillet with nonstick spray, lay the assembled sandwich on the skillet and top with another pan to press down the panini. Cook for a few minutes, flip and cook the other side for a few minutes or until crispy.

Lastly, if you’re firing up the grill, simply spray both sides of the sandwich with nonstick spray, place on the preheated grill and cook each side for a few minutes.

Ingredients:

  • 2 slices ciabatta bread or 1 ciabatta roll
  • 2 slices low fat provolone cheese
  • 1 Tbsp. avocado, mashed
  • 2 tsp. pesto

Directions:

  1. On one slice of the bread, spread mashed avocado. Spread pesto on the other slice of bread. Top one slice with cheese spinach and sundried tomato. Finally, top with other slice of bread.
