On Nutrisystem, Count As: 1 SmartCarb and 1 Extra
Ingredients:
- 3 cups baby potatoes or fingerling potatoes
- 2 Tbsp. olive oil
- ½ tsp. dried thyme*
- ½ tsp. dried rosemary*
- ½ tsp. dried marjoram*
- ½ tsp. dried oregano*
- ½ tsp. garlic powder
- ½ cup water
- *can use 2 tsp. of Italian seasoning instead
Directions:
- Turn Instant Pot on SAUTE and add olive oil.
- Pierce potatoes with a fork.
- When Instant Pot is hot, add potatoes.
- Sprinkle seasonings, stirring occasionally to brown all sides.
- Once browned, add water.
- Place lid on Instant Pot and set to MANUAL pressure for 7 minutes.
- Once done, use quick release by pressing CANCEL and then turning the steam floating valve on the lid to VENTING position. Open lid when floating valve drops.
