Ingredients:

  • 3 oz. lean ground turkey breast, raw
  • ¼ cup green bell peppers, diced
  • ¼ cup onions, diced
  • ¼ cup celery, diced
  • ¼ cup spinach, chopped
  • ½ cup low-sodium tomato sauce
  • ½ tsp. chili powder
  • ½ tsp. cumin
  • ¼ tsp. garlic powder
  • ¼ tsp. black pepper
  • ¼ cup pinto beans
  • ¼ cup kidney beans
  • ¼ cup shredded low-fat cheddar cheese
  • 2 Tbsp. scallions or green onions
  • Zero-calorie cooking spray, as needed

Directions:

  1. Heat medium-sized saucepan over medium heat. Spray with cooking spray.
  2. Add the turkey, bell peppers, onions and celery. Cook until the turkey meat is browned and the vegetables are soft, approximately 6-8 minutes.
  3. Add the chopped spinach, tomato sauce, chili powder, cumin, garlic powder and black pepper.
  4. Rinse the pinto beans and the kidney beans under water to remove excess salt. Add the beans to the saucepan.
