- 2 pears, sliced vertically into ½-inch slices
- 1 red onion, peeled and cut into wedges
- 4 cups red potatoes, halved
- 1 ½ Tbsp. olive oil
- ¼ tsp. black pepper
- 2 tsp. fresh rosemary, chopped
- Preheat oven to 350°F.
- Place sliced pears, potato halves and red onion wedges onto a baking sheet.
- Drizzle with olive oil and sprinkle with the rosemary and black pepper. Toss well to combine.
