If we’re being honest, the best part about baking cookies is the cookie dough. So, why not skip the baking altogether? We’re doing just that in this no-bake cookie dough recipe that’s both nutritious and delicious! Featuring crunchy macadamia nuts and sweet white chocolate, you can finally crush your cookie dough cravings without crushing your weight loss goals.

white chocolateTo make this cookie dough safe to eat without baking it, we nix the eggs and focus on wholesome ingredients that keep things light and healthy. Instead of real butter and sugar, we swapped in light butter and a stevia brown sugar blend that saves you calories. We also substitute regular white flour with whole wheat flour for extra fiber. Microwaving the whole wheat flour before adding it to your dough can help destroy any harmful bacteria.

It only takes five steps and seven simple ingredients to whip up this decadent dessert. In a large bowl, combine the light butter with the stevia brown sugar blend. Set this aside and grab a microwavable bowl. Place whole wheat flour in the bowl and microwave for one minute and 15 seconds. Next, add the flour, vanilla extract and nonfat milk to the large bowl with the butter and stevia mixture. Mix well before stirring in chopped macadamia nuts and white chocolate chips. Grab a spoon and enjoy your cookie dough creation!

The Leaf Pro Tip: If you’re not a fan of macadamia nuts, you can easily swap in a different nut that you enjoy. Try this recipe with cashews, almonds or even pecans for a healthy substitute. Regular or stevia-sweetened chocolate chips can also take the place of the white chocolate if you’re looking for a tasty alternative.
