Ingredients:
- 2 cups sliced strawberries
- 2 cups rhubarb, cut into ½-inch pieces (3-4 stalks)
- 1 Tbsp. corn starch
- 2 tsp. stevia
- 1 cup oats
- ½ cup almond flour
- ¼ cup light butter, melted
- 2 Tbsp. sugar free maple syrup
- 1 tsp. cinnamon
Directions:
- Preheat oven to 375°F.
- Mix strawberries and rhubarb and toss with corn starch and stevia. Pour into greased 9 x 9 baking dish.
- In a separate bowl, combine melted butter, oats, almond flour, syrup and cinnamon.
- Pour evenly over the fruit and bake for 45 minutes or until topping is golden and filling is bubbly.
