These Acai Energy Balls are the perfect snack to fuel your day. They are easy to make and only require a few simple ingredients that you likely already have in your pantry. Made with acai powder, pitted dates, cashews, freeze dried blueberries and water, they’re full of nutrients that will give you the boost you need!

Ingredients:

  • 2 Tbsp. acai powder
  • 1 cup pitted dates
  • 2/3 cup cashews
  • 1 oz. freeze dried blueberries
  • 1-2 Tbsp. water

Directions:

  1. Place cashews into a food processor and process until fine.
  2. Add remaining ingredients (except for water) and process until combined. Add water if the mixture seems a little dry.
  3. Scoop out a spoonful of the mixture and roll it into a ball using your hands. Repeat.
  4. Place the protein balls into the refrigerator for at least an hour.
