According to Livestrong.com, poppy seeds are rich in fiber, with over three grams in each two-tablespoon serving. They also contain several minerals, such as calcium, phosphorus, copper and manganese. Calcium, phosphorus and copper are all utilized in the body to support bone health. To make these Lemon Poppy Seed Energy bites, you will need a half of a cup each of dry oats, cashews and golden raisins. You should also juice and zest one lemon and measure out two teaspoons of poppy seeds. Place all of the ingredients into a food processor except for the poppy seeds. Process until a dough forms, then add the poppy seeds and pulse until the mixture is well combined. Using a tablespoon, portion out 12 equal-sized bites and roll them neatly into balls. Store your finished energy bites in the fridge for healthy snacks all week long!

- ½ cup dry oats
- ½ cup cashews
- ½ cup golden raisins
- 1 lemon, juiced and zested
- 2 tsp. poppy seeds
- Place all ingredients into a food processor except for the poppy seeds. Blend until a dough forms.
