Ingredients:

  • 1 can lite coconut cream, unsweetened
  • 6 oz. plain nonfat greek yogurt
  • 1 lemon, zested and juiced
  • 1 packet stevia
  • 2 strawberries, sliced strawberries

Directions:

  1. Place the can of coconut cream in the fridge to chill overnight.
  2. In a bowl, add the coconut cream (~1/2 cup), avoiding any of the coconut water at the bottom of the can.
  3. Whip the cream for about 3 minutes until fluffy.
  4. Add in lemon zest and juice, stevia and yogurt. Whip for another 3 minutes.
  5. Transfer to glasses and top with strawberries.
