Oatmeal is the breakfast of champions. It’s rich in keep-you-full fiber and provides the energy you need to get you through a busy day. But while it’s a great healthy breakfast choice, it can be hard to take a bowl of oats with you if you’re running out the door in the morning. That’s why we’ve create these perfectly portable cranberry orange muffins!
A bowl of hearty oats joins forces with a muffin tin to create these grab-and-go breakfast cups. Not only are they super easy to make and take, these cranberry orange muffins are also gluten free, dairy free and guilt free.
The first step of this healthy cranberry orange muffin recipe is a mashing up bananas. These will add major flavor and create a deliciously moist texture. Combine the mashed bananas with rolled dry oats, baking powder, cinnamon, eggs, unsweetened almond milk and vanilla extract to create the gluten free muffin batter. Fold in orange zest and cranberries, then pour the mixture into a greased muffin tin. (The batter should make 12 muffins.) Finally, pop these tasty fall muffins in a 350 degree oven and bake for 30 minutes.

To complete your Flex breakfast, pair your gluten free muffin with two protein-packed PowerFuels. We think they would be super tasty with a serving of nuts, such as walnuts, almonds or peanuts. Better yet, sprinkle the nuts on top of the muffins before you bake them! Another great PowerFuel that would pair perfectly with a sweet breakfast muffin is a glass of low-fat milk. You could even crumble the muffin over a bowl of low-fat plain or vanilla Greek yogurt. Yum!
