Ingredients:

  • Dough
  • 2 cups whole wheat pastry flour
  • 1 ½ cup all-purpose flour
  • 2 Tbsp. coconut sugar
  • 1 egg
  • ¼ cup light butter
  • 1 ¼ cup nonfat milk
  • 1 packet dry active yeast
  • Filling
  • 1 Tbsp. cinnamon
  • 1/3 cup unsweetened applesauce
  • Glaze
  • 2 oz. cream cheese, low fat
  • 2 tsp. light butter
  • ¼ cup powdered sugar
  • 1 Tbsp. nonfat milk (may need more to thin out)
  • ½ tsp. vanilla extract

Directions:

  1. Mix together the two flours and the yeast.
  2. Melt butter in a saucepan. Once melted, remove from the heat. Add in the milk and sugar. You want the milk to be about 105-110°F or slightly above room temperature. Turn off heat.
  3. Add in egg to liquid mixture and mix well.
  4. Pour wet ingredients into dry ingredients. Use a stand mixer with a dough hook until no longer sticky or knead by hand for about 5 minutes.
  5. Place dough in bowl and cover with plastic wrap. Let rise for about 2 hours.
  6. Turn risen dough on to a floured surface. Roll dough evenly into a rectangle shape, about ¼-inch thick.
  7. Spread applesauce over dough and sprinkle cinnamon on top.
  8. Roll dough from the long side until you have a long roll. Cut the roll into about 12 slices and place each slice on a greased baking dish.
  9. Cover the baking dish and let the rolls rise for about 20 minutes. During this time, preheat the oven to 350°F.
  10. After letting the cinnamon rolls rise, place them in the oven for about 25-30 minutes or until they are golden brown.
  11. Remove from oven and let cool slightly.
  12. While the rolls are cooling, make the glaze by combining butter, powdered sugar, vanilla and cream cheese in a food processor or blender. Add milk until desired thickness.
  13. Spread glaze over cinnamon rolls.
