On Nutrisystem, Count As: 1 Vegetable and 2 Extras

Ingredients:

  • 1 medium head of cauliflower
  • 1 red bell pepper, chopped
  • 3 carrots, chopped
  • ¼ cup onion, chopped
  • 3 scallions, chopped
  • 1 Tbsp. sesame oil
  • 1 Tbsp. soy sauce
  • 2 Tbsp. slivered almonds
  • 2 eggs
  • 1 tsp. water

Directions:

  1. Wash and dry the cauliflower. Chop it in a food processor to form a rice texture. Set aside.
  2. Beat eggs with water in a small bowl.
  3. Heat up a skillet to medium heat and spray it with cooking spray.
  4. Add sesame oil to the pan. Once hot, add the chopped onions and cook until soft.
  5. Add the chopped bell peppers and carrots. Cook until soft.
  6. After 5 minutes, add the cauliflower rice and continue cooking for another 5 minutes.
  7. Add the scrambled eggs and green onions. Stir and serve with soy sauce.
