Ingredients:
- 1 medium head of cauliflower
- 1 red bell pepper, chopped
- 3 carrots, chopped
- ¼ cup onion, chopped
- 3 scallions, chopped
- 1 Tbsp. sesame oil
- 1 Tbsp. soy sauce
- 2 Tbsp. slivered almonds
- 2 eggs
- 1 tsp. water
Directions:
- Wash and dry the cauliflower. Chop it in a food processor to form a rice texture. Set aside.
- Beat eggs with water in a small bowl.
- Heat up a skillet to medium heat and spray it with cooking spray.
- Add sesame oil to the pan. Once hot, add the chopped onions and cook until soft.
- Add the chopped bell peppers and carrots. Cook until soft.
- After 5 minutes, add the cauliflower rice and continue cooking for another 5 minutes.
- Add the scrambled eggs and green onions. Stir and serve with soy sauce.
