On Nutrisystem, Count As: 2 PowerFuels, 2 Extras and 2 Vegetables
- 1 cup cauliflower rice
- 3 oz. imitation crab, chopped
- 1 Persian cucumber, sliced
- 1/8 avocado, diced
- 1/4 cup shredded carrots
- 1/2 cup edamame, deshelled
- 1 scallion, green parts chopped
- 1 Tbsp. light mayonnaise
- 1 tsp. sriracha
- 1 dash of sesame seeds
- Steam cauliflower rice in the microwave for 2-4 minutes. Let cool.
- Top cauliflower rice with crab, cucumbers, avocado, carrots and edamame.
- Garnish with chopped scallions and sesame seeds.
- In a small bowl, mix together mayo and sriracha. Drizzle on top of the sushi bowl.
