To kick off this sushi lunch, get started by preparing the star of the show, cauliflower rice. You can either make it from scratch or purchase a pre-made frozen bag that can be easily steamed in the microwave. After you steam your cauliflower rice, let it cool and then top it with three ounces of chopped imitation crab meat, one sliced Persian cucumber, an eighth of an avocado, a quarter-cup of shredded carrots and a half-cup of edamame. Garnish your bowl with one chopped scallion and a dash of sesame seeds. Finally, mix together your dressing by combining one tablespoon of light mayo with a teaspoon of sriracha and drizzle it over your bowl.

Ingredients:

  • 1 cup cauliflower rice
  • 3 oz. imitation crab, chopped
  • 1 Persian cucumber, sliced
  • 1/8 avocado, diced
  • 1/4 cup shredded carrots
  • 1/2 cup edamame, deshelled
  • 1 scallion, green parts chopped
  • 1 Tbsp. light mayonnaise
  • 1 tsp. sriracha
  • 1 dash of sesame seeds

Directions:

  1. Steam cauliflower rice in the microwave for 2-4 minutes. Let cool.
  2. Top cauliflower rice with crab, cucumbers, avocado, carrots and edamame.
  3. Garnish with chopped scallions and sesame seeds.
  4. In a small bowl, mix together mayo and sriracha. Drizzle on top of the sushi bowl.
