Spice up your morning with a savory twist on waffles! This zesty breakfast is jam-packed with nutritious ingredients and delicious, spicy flavor. Whip up these Cheddar Jalapeno Waffles for an easy, cheesy way to start your day!

They are delicious for breakfast paired with low-sodium turkey bacon and eggs, but could also double as a tasty addition to dinner with a bowl of your favorite chili recipe.

To make them, preheat your waffle iron and grab a large mixing bowl. Mix together whole wheat pastry flour, cornmeal and baking powder. In another bowl, combine shredded zucchini, egg, nonfat plain Greek yogurt, light butter, unsweetened almond milk and honey.

Tip: Make sure to squeeze the liquid out of the shredded zucchini before adding it to the bowl! 

Add the wet ingredients to the dry ingredients and mix well. Fold in chopped and seeded jalapenos and reduced fat shredded cheddar cheese.

Grease your waffle iron with nonstick spray, then pour about a third of the batter into the waffle iron. Cook the waffle until it’s golden brown and crispy. Repeat this process with the remaining batter, spraying with nonstick spray between each batch.

  • 1 cup whole wheat pastry flour

  • 1 cup zucchini, shredded and water squeezed out
  • ½ cup shredded cheddar cheese, reduced fat
  • 1 egg
  • ½ cup nonfat plain Greek yogurt
  • 2 Tbsp. light butter
  • ½ cup unsweetened almond milk
  • 1 Tbsp. honey
  • 2 jalapenos, seeded and chopped

Directions:

  1. Preheat waffle iron.
  2. In a large bowl, whisk together flour, cornmeal and baking powder.
  3. In another bowl, mix together the zucchini, egg, yogurt, butter, milk and honey.
  4. Add wet ingredients to dry ingredients and mix well. Fold in jalapenos and cheese.
  5. Grease waffle iron with nonstick spray. Pour about 1/3 of the batter into the waffle iron and cook until golden brown and crispy.
