Cheddar Jalapeno Waffles on a plate with a side of cheese and peppersSpicy food lovers will absolutely adore this recipe for cheese waffles, which features hot jalapenos, shredded zucchini, cornmeal and a touch of sweetness from honey. They are delicious for breakfast paired with low-sodium turkey bacon and eggs, but could also double as a tasty addition to dinner with a bowl of your favorite chili.

To make them, preheat your waffle iron and grab a large mixing bowl. Mix together whole wheat pastry flour, cornmeal and baking powder. In another bowl, combine shredded zucchini, egg, nonfat plain Greek yogurt, light butter, unsweetened almond milk and honey.

Tip: Make sure to squeeze the liquid out of the shredded zucchini before adding it to the bowl!

Add the wet ingredients to the dry ingredients and mix well. Fold in chopped and seeded jalapenos and reduced fat shredded cheddar cheese.
