- 1 cup whole wheat pastry flour
- 2/3 cups cocoa powder
- ½ tsp. baking powder
- ½ tsp. salt
- 2 large eggs
- ¼ cup skim milk
- 1 tsp. mint peppermint extract
- 1 5.3 oz. container nonfat vanilla Greek yogurt
- 20-30 drops liquid stevia
- ¼ cup mini chocolate chips
- 2 Tbsp. crushed peppermint candies or candy canes
- Preheat oven to 350° F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder and salt. In a separate bowl, whisk together egg, Greek yogurt, skim milk, peppermint extract and Stevia.
- Slowly add dry ingredients to wet and stir until just combined. Fold in mini chocolate chips and crushed peppermint. Refrigerate dough for 20-30 minutes.
- Scoop level tablespoons of cookie dough onto the prepared baking sheets.
- Bake for 8 to 9 minutes. Cool on the baking sheets for several minutes before transferring to a wire rack to cool completely.
