To start, preheat the oven to about 400 degrees. Spray the mini muffin tin cups with zero-calorie nonstick cooking spray. In a large bowl, thoroughly combine flour, baking powder and baking soda. Once combined, evenly stir in milk, egg, coconut oil and cinnamon. Mix the ingredients until a batter is formed.

Once the pancake batter is smooth, evenly distribute the batter into each mini muffin cup. Top the Mini Pancake Muffins with blueberries or your topping of choice before you pop them in the oven. You could also wait until these delicious Mini Pancakes bake for 10 minutes, remove them from the oven and top with berries.

Ingredients:

  • 1 cup whole wheat flour
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 ¼ cup nonfat milk
  • 1 egg
  • 1 ½ Tbsp. coconut oil, melted
  • ¼ tsp. cinnamon
  • 1 cup blueberries

Directions:

  1. Preheat oven to 400°F. Spray a mini muffin tin with nonstick spray.
  2. Combine flour, baking powder and baking soda in a large bowl.
  3. Stir in milk, egg, melted coconut oil and cinnamon. Mix well.
  4. Scoop a spoonful of the batter into each muffin cup (recipe makes 24 mini muffins).
  5. Top the muffins with blueberries or another topping of choice.
  6. Bake for 10 minutes or until a toothpick comes out clean.
