- 1 lb. grape tomatoes, sliced in half
- 1 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 1 tsp. sugar
- Sea salt and black pepper, to taste
- 5-10 fresh basil leaves, julienned
- Preheat oven to 450 degrees F. Line a large baking sheet or roasting pan with foil and spray with non-stick cooking spray.
- In a bowl, combine tomatoes, olive oil, minced garlic, salt and pepper. Spread tomatoes in the prepared pan, in a single layer.
- Bake for 25-30 minutes, until tomatoes begin to caramelize. Remove from oven, and sprinkle with fresh basil before serving.
