On Nutrisystem, Count As: 1 SmartCarb, 2 PowerFuels, 1 Vegetable and 3 Extras


  • 2 lbs lean beef (rump roast, eye of round, bottom round)
  • 2 Tbsp. olive oil
  • 1 onion, diced
  • 4 carrots, sliced
  • 3 cups cubed potatoes
  • 3 cloves garlic, minced
  • 2 Tbsp Italian seasoning
  • ½ tsp. black pepper
  • 1 cup beef broth, low sodium
  • 1-6 oz can tomato paste, low sodium


  1. Turn Instant Pot on SAUTE and add olive oil.
  2. Add beef and roast 1-2 minutes per side. Remove beef.
  3. Add carrots, onions, garlic and potatoes.
  4. Pour in broth and tomato paste.
  5. Return beef to bowl and sprinkle Italian seasoning and black pepper.
  6. Place lid on Instant Pot and set to MEAT/STEW for 90 minutes.
  7. Once done, use natural release method.
  8. Remove beef and slice. Place back into pot roast.
