Ingredients:

  • 2 cups old fashioned rolled oats, dry
  • 2 tsp. baking soda
  • ¼ cup honey
  • 1 ½ cup pumpkin puree
  • 1 Tbsp. pumpkin pie spice
  • ¼ cup unsweetened almond milk
  • 2 eggs
  • 1 egg white
  • 1 tsp. vanilla extract

Directions:

  1. Place oats into a food processor and blend until flour-like consistency. Pour into a mixing bowl and stir in baking soda. Set aside.
  2. Place remaining ingredients into the food processor and blend until well incorporated. Stir into the oat flour mixture.
  3. Pour the batter into a greased or lined muffin tin. Bake at 350°F for 20-25 minutes.
