Only a quarter cup of brown sugar is used in this recipe, with most of the sweetness coming naturally from the pumpkin puree. Ingredients:

  • 1 ½ cups rolled oats, dry
  • 1 cup pumpkin puree, unsweetened
  • ½ cup almond butter
  • ¾ tsp. baking soda
  • ½ tsp. vanilla extract
  • 1 ½ tsp. pumpkin pie spice
  • ¼ cup brown sugar

Directions:

  1. Preheat oven to 375°F and line baking pan with parchment paper.
  2. Add oats to a food processor and blend until flour-like consistency.
  3. Stir in the rest of the ingredients. Pour into the baking pan.
  4. Bake for 25 minutes. Remove from oven and let cool.
  5. Cut into 16 equal-sized bars
