Got 10 minutes? Dig into a decadent, diet-friendly dessert that’s ready in a snap! Using just 10 wholesome ingredients, you can create a gluten-free treat that fits into your healthy diet. Grab your air fryer and whip up these Cinnamon Blondies made with chickpeas, cashew butter, rolled oats and chocolate chips.

We use one surprising ingredient as the base of these blondies: chickpeas! If you already tried our recipe for Raspberry Chickpea Blondies, you know that this mystery ingredient is a great way to pack your desserts with protein and fiber. The mild taste is undetectable and they create a moist, rich texture that rivals butter and oil.

In addition to our secret ingredient, these Cinnamon Chickpea Blondies are baked in a unique way. Instead of throwing them in the oven like most blondie recipes, we cook them up in the air fryer for a quick and easy treat.

How to Make Chickpea Blondies

You will need one 15-ounce can of salt-free chickpeas for your blondies. Pour the chickpeas into your food processor with cashew butter, an egg, dry rolled oats, vanilla extract, baking powder, baking soda, cinnamon and a stevia brown sugar blend.

Process the ingredients until a smooth yet thick batter forms, then pour it into a greased air fryer baking pan. Smooth out the top and sprinkle it with chocolate chips.

Bake the chickpea blondies at 350 degrees in your air fryer for 10 minutes. Once a toothpick comes out mostly clean, remove the blondies from the air fryer and let them cool completely before slicing and serving.

Healthy Hacks

One of these Air Fryer Cinnamon Chickpea Blondies clocks in at just 198 calories. Because it’s packed with protein from the cashew butter and fiber from the chickpeas, you can log this balanced dessert as one PowerFuel, one SmartCarb and one Extra in your NuMi journal. Want to add another Extra? Garnish your blondie with some low-fat whipped cream and an extra sprinkle of cinnamon.

Watching your sugar intake? Swap in the chocolate chips with a stevia-sweetened variety! You can typically find these in the baking section or health food aisles at your local grocery store.

Benefits of Cinnamon

Not only is cinnamon delicious but it is also said to provide many health benefits. According to Medical News Today, “Some studies have suggested that the compounds in cinnamon have antioxidant, anti-inflammatory, antidiabetic, and antimicrobial properties, and that they might offer protection from cancer and cardiovascular disease, among other conditions. However, more evidence is needed to confirm cinnamon’s benefits.”
