We use one surprising ingredient as the base of these blondies: chickpeas! The mild taste is undetectable and they create a moist, rich texture that rivals butter and oil.

In addition to our secret ingredient, these Cinnamon Chickpea Blondies are baked in a unique way. Instead of throwing them in the oven like most blondie recipes, we cook them up in the air fryer for a quick and easy treat.

How to Make Chickpea Blondies

You will need one 15-ounce can of salt-free chickpeas for your blondies. Pour the chickpeas into your food processor with cashew butter, an egg, dry rolled oats, vanilla extract, baking powder, baking soda, cinnamon and a stevia brown sugar blend.

Process the ingredients until a smooth yet thick batter forms, then pour it into a greased air fryer baking pan. Smooth out the top and sprinkle it with chocolate chips.

Bake the chickpea blondies at 350 degrees in your air fryer for 10 minutes. Once a toothpick comes out mostly clean, remove the blondies from the air fryer and let them cool completely before slicing and serving.

Ingredients:

  • 1 15-oz. can chickpeas, no salt added
  • ¼ cup cashew butter
  • 1 egg
  • ¼ cup rolled oats dry
  • 1 tsp. vanilla extract
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • 1 Tbsp. cinnamon
  • 2 Tbsp. stevia brown sugar blend
  • 2 Tbsp. chocolate chips

Directions:

  1. Grease an air fryer baking pan with nonstick cooking spray.
  2. Preheat air fryer to 350°F.
  3. In a food processor, combine all ingredients except for the chocolate chips. Process until smooth. The batter should be thick.
  4. Add the batter to the baking pan and smooth out the top. Sprinkle with chocolate chips.
  5. Bake in the air fryer for 10 minutes or until toothpick comes out mostly clean.
  6. Remove from the air fryer and allow to cool before cutting.
