There is no shortage of fiber in this Superfood Autumn Health Bowl. Start your week right with a meatless Monday meal packed full of superfood ingredients. This bowl brings you the flavor of fall using hearty kale, shredded carrots, fresh blueberries, chopped onions, pumpkin seeds and a sweet, homemade maple vinaigrette. Lentils and edamame pack in some protein to keep you full and fuel your day.

To make this superfood-filled lunch, mix up your vinaigrette in a small bowl using olive oil, apple cider vinegar and maple syrup. Shred kale in a separate bowl, then pour some of the dressing on top. Massage the dressing into your kale, then add lentils, chopped red onions, shredded carrots, blueberries, deshelled edamame and pumpkin seeds. Drizzle on the rest of your dressing and serve.

On Nutrisystem, Count As: 1 SmartCarb, 1 PowerFuel, 2 Extras and 1.5 Vegetables


  • ¼ cup lentils, cooked
  • 1 cup kale
  • ¼ cup red onion, chopped
  • ½ cup shredded carrots
  • ½ cup blueberries
  • ¼ cup edamame, deshelled
  • 1 Tbsp. pumpkin seeds
  • Maple Vinaigrette
  • 1 tsp. olive oil
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. maple syrup


  1. In a small bowl, mix the vinaigrette ingredients.
  2. Break up kale into small pieces and place in a bowl.
  3. Pour a small amount of dressing over the kale and massage it in the dressing.
  4. Add the rest of the superfood ingredients to the bowl. Toss in the remaining dressing and serve.
