The leftover Thanksgiving feast in your fridge is waiting to be transformed. Turn it into this warm, crispy, seasonal panini.
Don’t let that extra turkey go to waste! What may seem like a lost cause is actually a miracle for your upcoming weekly meal prep. Roasted turkey breast is a versatile PowerFuel option that you can incorporate into a variety of Flex meals. We sliced it up and piled it onto a warm, grilled sandwich with your leftover cranberry sauce, salad and Swiss cheese.
To create this post-holiday panini, you will need a whole wheat sandwich thin or another high fiber bread option. Fill it up with two ounces of leftover turkey, a tablespoon of cranberry sauce, a slice of Swiss cheese and two lettuce leaves. You can also feel free to add any other leftover non-starchy veggies or salad that you still have around. Once you assemble your sandwich, you can grill it up in a panini press or greased skillet until the cheese is melted and bread is crispy. Enjoy round two of Thanksgiving dinner!
