Ingredients:

  • 1 whole sweet potato, raw
  • 2 Tbsp. olive oil
  • 1/8 tsp. black pepper
  • 2 oz. smoked salmon
  • 4 Tbsp. cream cheese, low fat
  • 4 tsp. capers

Directions:

  1. Preheat air fryer to 400°F. Spray basket with nonstick spray.
  2. In a bowl, toss together sweet potato slices with olive oil and black pepper.
  3. Place slices in the air fyer in one even layer. Be careful not to overlap slices.
  4. Fry for 8 minutes. Flip each slice and fry for an additional 4 minutes.
  5. Top each slice with cream cheese, smoked salmon and capers.
