Ingredients:
- 2 lbs. lean ground turkey
- 3 tsp. olive oil
- 15 oz. ricotta cheese, part skim
- 1 egg
- 2 tsp. Italian seasoning
- ¼ cup fresh chopped parsley (plus more for garnish)
- 12 sheets no boil/oven ready lasagna noodles
- 5 cups marinara sauce, low sodium
- 2 cups shredded mozzarella cheese, part skim
Directions:
- In a Dutch oven, heat 2 teaspoons of olive oil on a stovetop set to medium.
- Add ground turkey. Once fully cooked, remove the turkey and set aside.
- Mix ricotta cheese, egg, Italian seasoning and parsley. Set aside.
- Drizzle 1 teaspoon of oil in the bottom of the Dutch oven to prevent sticking. Add 1 cup of marinara sauce to the bottom of the pan. Top with a layer of lasagna noodles (breaking the noodles to fit). Then add 1 cup of marinara sauce and 1/3 of the ground turkey.
- Place a spoonful of the ricotta mixture over the ground turkey and add 1/2 cup of mozzarella cheese.
- Continue layering the ingredients in this order: Noodles, marinara, turkey, ricotta, mozzarella, noodles, marinara, turkey, ricotta, mozzarella.
- After the last layer, top with one more layer of lasagna noodles, 1 cup of marinara, and 1/2 cup cheese.
- Place the lid on the Dutch oven. Bake in an oven preheated to 350 degrees OR continue to cook on the stove over low heat for 30-40 minutes.
