Ingredients:

  • 1 head cauliflower
  • Cauliflower Marinade
  • 1 tsp. olive oil
  • 1 Tbsp. lemon juice
  • 2 cloves garlic, minced
  • 2 tsp. fresh thyme
  • 1 tsp. cumin
  • 1 tsp. za'atar seasoning
  • 1 Tbsp. fresh parsley, chopped
  • 1 tsp. smoked paprika
  • Black pepper, to taste
  • Broth
  • 1 tsp. olive oil
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. fresh thyme
  • 1 Tbsp. lemon juice
  • 2 cups vegetable broth, low sodium
  • Toppings
  • ¼ cup raisins
  • ¼ cup pine nuts
  • Chopped parsley

Directions:

  1. Trim leaves off cauliflower.
  2. In small bowl, combine cauliflower marinade ingredients. Rub marinade onto the cauliflower.
  3. To make the broth, add olive oil to the Instant Pot and set to SAUTE mode. Once hot, add onion and minced garlic. Cook for 5 minutes. Add vegetable broth, thyme, and lemon juice.
  4. Add trivet to Instant Pot and then place cauliflower head on top.
  5. Close with lid set to SEAL. Set Instant Pot to MANUAL for 3 minutes. Once finished, let it naturally release for 3 minutes before fully releasing the seal.
  6. Remove cauliflower and broth and place onto a baking dish. Broil in the oven for about 3 minutes, to get a nice crisp.
  7. Top with pine nuts and golden raisins. Garnish with extra parsley.
