Ingredients:

  • 4 sheets of whole grain lasagna noodles
  • 4 oz. cooked shrimp, chopped
  • 1/3 cup ricotta cheese, part skim
  • ½ cup shredded mozzarella cheese, part skim
  • 1 egg white
  • ½ tsp Italian seasoning
  • Black pepper, to taste
  • ½ cup marinara sauce, low sodium
  • ½ cup frozen spinach

Directions:

  1. Preheat oven to 350°F. Pour ¼ cup of marinara sauce into a baking dish.
  2. Cook lasagna noodles according to package's directions. Drain and let cool.
  3. Cook spinach according to package's directions. Drain and let cool. Try to squeeze as much liquid out as possible.
  4. In a bowl, combine ricotta cheese, ¼ cup of shredded cheese, egg white, Italian seasoning and black pepper.
  5. Fold in chopped shrimp.
  6. Take a lasagna noodle and place about 2 tablespoons of the filling mixture on one end of the roll. Roll up the noodle and transfer to baking dish. Repeat with remaining noodles and filling.
  7. Pour remaining ¼ cup of marinara sauce on top of the rolls.
  8. Cover and bake for 25 minutes.
  9. Remove cover, add remaining mozzarella cheese and bake for another 5 minutes, until cheese has melted.
