Ingredients:
- 4 sheets of whole grain lasagna noodles
- 4 oz. cooked shrimp, chopped
- 1/3 cup ricotta cheese, part skim
- ½ cup shredded mozzarella cheese, part skim
- 1 egg white
- ½ tsp Italian seasoning
- Black pepper, to taste
- ½ cup marinara sauce, low sodium
- ½ cup frozen spinach
Directions:
- Preheat oven to 350°F. Pour ¼ cup of marinara sauce into a baking dish.
- Cook lasagna noodles according to package's directions. Drain and let cool.
- Cook spinach according to package's directions. Drain and let cool. Try to squeeze as much liquid out as possible.
- In a bowl, combine ricotta cheese, ¼ cup of shredded cheese, egg white, Italian seasoning and black pepper.
- Fold in chopped shrimp.
- Take a lasagna noodle and place about 2 tablespoons of the filling mixture on one end of the roll. Roll up the noodle and transfer to baking dish. Repeat with remaining noodles and filling.
- Pour remaining ¼ cup of marinara sauce on top of the rolls.
- Cover and bake for 25 minutes.
- Remove cover, add remaining mozzarella cheese and bake for another 5 minutes, until cheese has melted.
