How to Make Asian Chicken Lettuce Wraps at Home

Asian Chicken Lettuce WrapsThese crunchy lettuce wraps were inspired by the popular Thai Lettuce Wraps from The Cheesecake Factory. Enjoy the same delicious flavors that you know and love while staying home with this healthy recipe that fits into your weight loss plan. Whether you need a quick and easy lunch to take to the office or a satisfying dinner to come home to, these perfectly portioned pockets of goodness are just what your healthy menu needs.

These lettuce wraps have three main components: The creamy peanut sauce, the crunchy marinated cucumbers and the fabulous filling!

Asian Chicken Lettuce WrapsTo make the peanut sauce, grab a small bowl and add peanut butter, light mayonnaise, low sodium soy sauce, sesame oil, lime juice, honey, sriracha, rice vinegar and garlic powder. Whisk the ingredients until smooth and set the finished sauce aside. 

Next, you’ll whip up some quick marinated cucumbers. In a large bowl, combine sliced cucumbers, chopped shallots, chopped red bell pepper, lime juice, soy sauce, rice vinegar and honey. Let the veggies sit for about an hour to soak up all of the flavor.

Now it’s time to cook up your filling and assemble your wraps! Chop up some grilled chicken and add two tablespoons of the peanut sauce. Toss to coat the chicken in the sauce, then divide the mixture equally among 12 Bibb or Boston lettuce leaves. Add the marinated cucumbers, along with bean sprouts, carrots, cilantro, green onions and chopped peanuts. Serve your finished wraps with the remaining peanut sauce on the side.

Ingredients:

  • Chicken Lettuce Wraps
  • 8 oz. grilled chicken
  • ¼ cup shredded carrots
  • ¼ cup bean sprouts
  • 1 tsp. cilantro, chopped
  • 1 green onion, chopped
  • 12 Bibb/Boston lettuce leaves
  • 1 Tbsp. peanuts
  • Marinated Cucumbers
  • 1 cucumber, peeled, halved and sliced
  • 1 Tbsp. chopped shallot
  • ½ red bell pepper, chopped
  • ½ lime, juiced
  • 1 Tbsp. soy sauce, low sodium
  • 1 Tbsp. rice vinegar
  • 1 tsp. honey
  • Peanut Sauce
  • 2 Tbsp. peanut butter
  • 2 Tbsp. light mayonnaise
  • 1 Tbsp. soy sauce, low sodium
  • 1 tsp. sesame oil
  • ½ lime, juiced
  • 1 Tbsp. honey
  • 1-2 tsp. sriracha
  • 3 Tbsp. rice vinegar
  • 1 tsp. garlic powder

Directions:

  1. Combine marinated cucumber ingredients together in a bowl. Let sit for 1 hour.
  2. Whisk peanut sauce ingredients together until well combined.
  3. Chop up chicken. Add 2 tablespoons of the peanut sauce and toss to coat.
  4. Fill each lettuce leaf equally with chicken, marinated cucumbers, bean sprouts, carrots, cilantro, green onions and peanuts.
  5. Serve remaining peanut sauce on the side.
